Description: NATUR ACTIV is a dried, natural, active sour dough that is obtained by a productive method that takes place through different maturation stages in the fermenters. It is then dehydrated in a rapid but delicate way in order to keep the highest number possible of aromatic substances, natural yeasts and lactic bacteria unchanged. NATUR ACTIV can be used both in the production of leavened confectionery products such as Panettoni, Pandori, Colombe, Veneziane, croissants etc. as well as in the production of bread, pizzas, focaccias and breadsticks. NATUR ACTIV allows you to obtain finished products which fully respect the ancient traditions of confectionery and breadmaking, without having to turn to difficult preparation and conservation procedures (regarding natural yeast) that often produce unsatisfying results. With NATUR ACTIV, finished products have a rich, unique taste, an aromatic, slightly acid smell which is typical of products that undergo natural leavening, and a marvellous look and structure. NATUR ACTIV guarantees, apart from everything else, more flexibility in production process planning.
